Bart's Favorite Beef Stew

1 1/2 lbs. lean boneless round steak (1/2 inch thick), trimmed and cut into 1-inch cubes. (my grocery store sells "beef for stew")
2 large garlic cloves, minced
3 cups burgundy or other dry red wine
1/4 cup tomato paste
1/2 tsp dried thyme
2 bay leaves
1/2 cup water
2 (10 1/2-ounce) cans beef broth
10 small red potatoes, quartered (about 1/2 lb.)
6 medium carrots, cut into 1-inch pieces (about 1 lb.)
2 small onions, quartered (about 1/2 lb.)
1 (8-ounce) package mushrooms, halved
3 tblsp water
3 tblsp cornstarch
1/2 tsp salt
1/4 tsp black pepper
Chopped fresh parsley (optional)

Lightly brown the meat in a pan then put everything in the crockpot minus the water and starch. Cook until the meat falls apart with a fork. Add starch to the water and mix in until it thickens to your liking.
