Ancho Spiced Meat and Veggies

5 lbs meat - Grind 1/3 of it
An onion - chopped
Some other chopped veggies like celery and bell peppers and sheeeit
3 Tbspns of ancho chili powder. Add one more if the meat is fatty.
1 tsp cayenne pepper
3 garlic cloves. Roast them if you're not too busy. Or use a shitload of minced garlic.
2 tspns of salt
2 tspns of black pepper
2 cans of ro-tel with the green chilies in it to save time cutting tomatoes and green chilies yourself

Caramelize the onions in olive oil then dump them in the dutch oven. You can add the garlic now also.
Dump the ro-tel in with the onions and garlic.
Add the spices and stir that shit up.
Sear the meat in olive oil on a really high heat, then dump it in.
Mix up everything real good.

That was the Atkins version.

For thicker broth, add a tbspn of masa.
For richer taste and uniqueness, add a tspn of ground baking chocolate.

Now put the lid on the dutch oven and put it in a regular oven on 350 for 3 hrs. Stir once halfway through. Also, you can use any pot with a lid as a sub for a dutch oven. Or you can do this in a crock pot, but if you do, set it on 8 hours.

Now there you have it.
