Guadalupe Beef Pie

2 1/4 cups packaged biscuit mix (or 1 box Red Lobster Cheddar Bay Biscuit mix)
1/2+ cup cold water (varies according to mix used)
1 lb ground beef
8 oz sour cream
1-1/2 cup shredded cheddar cheese
2/3 cup mayo (best with real mayo)
1 yellow onion, chopped
2 medium tomatoes, thinly sliced
1 big green sweet pepper, chopped (or 2 small/medium ones)

Put 1/2 cup water in fridge. Grease 9x13 pan. Set aside. Preheat oven to 375.

For crust, in a medium bowl combine biscuit mix and cold water, stirring with fork until biscuit mix is moistened and a soft dough has formed. Press mixture into the bottom and 1/2 inch up the side of pan. Bake 10-12 minutes, until lightly browned.

Meanwhile in a large skillet, brown ground beef, drain. Set aside.

In a medium bowl combine sour cream, cheddar cheese, mayo and onion. Set aside.

Sprinkle ground beef over baked crust. Arrange tomato slices over beef and sprinkle with green pepper. Spread sour cream mixture evenly over top. Sprinkle with paprika. (I usually sprinkle a little cheddar over the crust before adding the other ingredients... I do the same on top of the beef.)

Bake uncovered 40-45 minutes... until bubbly around the edges.
