Southern Green Bean Salad

1 lb. green beans
1 shallot minced
3 tbs. balsamic vinegar
1/4 c. olive oil
salt & pepper (to taste)
3 oz. mixed baby greens
1 p. cherry/pear tomatoes (baby heirlooms are great too!)
1/4 c. fresh basil chiffonade
1/4 c. roasted pistachios (or almonds)
6 oz. crumbled feta

Blanch green beans til bright and tender (about 2 min.); shock in ice water, drain, dry.

Finely chop shallot and mince in pan with 1-2 tsp. oil; whisk shallot, vinegar, oil, S & P.

Spread greens onto platter, add tomatoes, green beans, basil.

Drizzle vinagrette, top with feta, nuts; ENJOY!
