Chicken Curry

Medium-sized chicken - 1
Cooking Oil - ½ cup
Lemon grass - 2 stalks
Onion (big) - 4 nos
Garlic - 3 cloves
Ginger paste - 1 tsp
Red Chilli powder - 1 tbsp
Turmeric - ½ tsp
Salt - ½ tsp or to taste

1. Clean chicken, remove skin and excess fat and cut into 2 inch pieces. Mix thoroughly with turmeric and ginger paste.
2. Remove outer stalks of lemon grass, keep about 3” from bottom up and grind together with the onions, garlic and chilli to make a paste.
3. Put a saucepan on a medium fire and heat the oil. Fry the lemon grass paste until aromatic. Stir fry till slightly brown. Add chicken pieces. Mix thoroughly. Cover the pan and cook on a medium fire for about 5minutes or till the juices from the chicken is absorbed. Stir till the oil is seen again. Stir thoroughly. Pour in just enough hot water to cover the chicken and let it simmer under a closed cover for about 5minutes. Test the chicken for tenderness, adding more water if necessary. Garnish with coriander leaves and remove from fire.
